Prepping meals generally mean setting aside a few hours once a week to prep meals for your week. This could mean prepping breakfast, lunch, or dinner. People start meal prepping for many different reasons, such as to eat healthier or reduce the amount of money they spend on eating at restaurants. Having meals ready to go is a great motivator to eat at home; make that meal healthy and you’ll be certain to follow through on your resolve.

 

Freezer-Friendly Breakfast Burritos

One of the most important meals of the day is arguably breakfast. Breakfast is crucial to get our day started. It provides us with much needed energy to be able to focus and stay present during our jobs and activities. What’s more important is making sure the breakfast is nutritional. This recipe is taken from the Kitchn, a lively food magazine on the web.

Breakfast Burrito Recipe

Servings 12 Burritos
What You’ll Need 10 to 12 Inch Tortillas (Large)

2 Medium Yukon Gold Potatoes

1 Small Red Onion

1 Large Red Bell Pepper

½ TSP Salt

1 TBSP Vegetable Oil

1 Sheet Pan

12 Large Eggs

¼ Cup Whole Milk

½ TSP Salt

10 Inch Skillet

2 TBSP Unsalted Butter

2 TBSP Monterey Jack Cheese

Aluminum Foil

Scramble Eggs & Roasted Vegetables

This meal prep is quite easy. Dice up the potatoes, red onion, and red bell pepper. With the vegetables in a bowl, add ½ tsp of salt and 1 tbsp of vegetable oil. After mixing up the contents, put the vegetables on a sheet pan. Roast the vegetables at 400° for 20 minutes. In a bowl, mix together eggs, milk, and ½ tsp of salt. Melt butter in a skillet on medium heat. Scramble the mixture until the eggs are mostly set and moist. Once the eggs and vegetables are done, set them aside to cool. This cooling is important. If you skip this step, the burritos may end up soggy.

Assemble the Burrito

This recipe creates 12 burritos. When using the ingredients, try to evenly disperse the eggs and vegetables. Sprinkle Monterey Jack Cheese over each tortilla. Placing cheese first will act as a barrier between the moist eggs and vegetables and the tortilla; this will keep the tortilla from getting soggy. Store Burritos

Once the burritos are rolled up, tear off a square of aluminum foil. Wrap the burrito within the burrito, making sure the foil covers up the entire tortilla. The tortillas can last for up to 3 months in the freezer!

Eat the Burritos

All you have to do for the next 12 mornings is to enjoy the burritos! Grab a single burrito and heat it in the microwave for 1 to 2 minutes on high. Grab some salsa, sour cream, and/or avocado to add to flare to your meal.

 

At about 300 calories per burrito, the meal is a great way to kick start your morning. You also get to control what you put in the burrito, unlike the frozen meals you purchase in store.
