Ingredients
- 2 golden beets
- 1 cup mini carrots
- 2 cups chopped greens
- 1 Tbsp dried cranberries
- 1 Tbsp pecans
- 2 Tbsp tahini
Instructions
- Preheat oven to 425 degrees.
- Peel and chop the beets into small pieces.
- Place on an oiled baking sheet and roast for 15 minutes (or until soft).
- Chop the carrots and greens.
- Combine everything in a salad bowl, serve, and top with tahini.
